In the desert country southwest of the city of Salta, the Quebrada de Cafayate is a scenic sedimentary canyon, with wildly eroded landforms reminiscent of Utah or New Mexico. Cyclists from Salta regularly ride the smooth paved road to the town of Cafayate, a long day trip whose reward is tasting sessions at any of three nearby wineries. Try the torrontis, a fruity white that's an Argentine exclusive.
If you have the ambition, the stamina, and a mountain bike, consider returning to Salta via the Valles Calchaqumes to Cachi and Payogasta, then cross the high puna of the Cuesta del Obispo before descending into the city.
