Solar power is used for lighting and cooking and an organic garden on property supplies vegetables for the kitchen along with the bounty of fruit that grows naturally. All meals are included in the price of lodging and have a Mexican influence, like huevos rancheros in the morning and fish tacos in the evening. The thatched-roof cabanas, hidden amidst wild fig trees, line the river, so you can wake up in the morning with a refreshing swim. Or return from your day in the jungle and lie in one of the hammocks on the porch.

Daily outings are also included in the price and can include guided jaunts to see waterfalls or caves along the river, kayaking, birdwatching, or a trip to see Mayan ruins. For many, the highlight is the chance to see the living Maya villagers and learn about tortilla and chocolate making. Cotton Tree manufactures its own chocolate bars and guests can help pick the fruit from the cacao trees, dry the beans with local farmers, and cook the chocolate into one of the tastiest souvenirs you can find in Central America. In fact, the chocolate-making activity has become so popular that Cotton Tree recently planted another 500 cacao trees and teaches workshops.

There's also a chance to drum with the villagers and see pottery, weaving, and woodcarvings created by local artisans. The hot showers in the cabana might be lukewarm at best, but that's a small price to pay for being at this off-the-grid establishment. The deep-in-the-jungle locale and partnership with surrounding villages more than make up for any discomfort.
