Might be too late to get this info to you, but I'd recommend Stanley Park (nice for a walk and view of the city), Grouse Mountain (for hiking and maybe mountain biking, weather-permitting), and an overnight or longer trip to Whistler prior to the Winter Olympics this February. Lots of places to shop; Granville Island offers a good mix of local crafts and cuisine.
