You're not going to go wrong with either of those spots, though Cap Juluca probably has the more sheltered aspect of the two, tucked away as it is in intimate Maundays Bay. You might also check out the Viceroy Anguilla, which fronts Caribbean-facing Meads Bay. While on the topic of beaches, the sunset scene at the Elvis' Beach Bar up the road at Sandy Ground Village is anything but calm! It's been voted one of the top reasons to visit the Caribbean by the New York Times and is the place to be for that Caribbean sunset photo-op (not to mention a big party spot once the sun goes down!).
