What can two adults do for one day only (a Monday) in Nashville?

Danny, since you will only be there for one day I would pick one area or one "theme" to are some ideas to choose from.
Nashville likes to claim it is Music City USA, so check to see if there is an afternoon or evening show of some new artist or someone you like. The Grand Ole Opry would be an awesome experience. They typically do not have Monday shows, but you can buy tickets for a house tour which they do every day. And if you like country music there is the Country Music Hall of Fame & Museum (if you don't the building is still beautiful)
Outside of downtown there is a replica Parthenon & Athena's Statue which is rather unique especially in the middle of Tenn...Vanderbilt University is nearby the Parthenon as well if you just feel being outside and strolling the beautiful campus.
Of course, if you are into driving out of the city some, then Opryland is another Nashville favorite and it's right beside Opry Mills where you can get your shopping on if you both so please. (Beware of parking fees at the hotel though!) This area was ravaged by a flood in 2010, so you might still see construction.
There are plenty of historic plantations around the outskirts of Nashville too, like The Hermitage (home of President Andrew Jackson) & Belmont Mansion.
Jack Daniel's & George Dickel distilleries are located near Nashville as well if you like tours & tastings.
If it was me, with one day to spare, I'd probably just pick a wonderful restaurant and stroll the streets of downtown... you'll probably see enough attractions that way :)
