My husband and I are flying into Paris in September and we will be traveling around France and Belgium for two weeks. Should we make reservations before we go or is it possible to find a room as we go?

Given that you'll be traveling in Europe's "shoulder season," I suspect you should be just fine, though I'd recommend you do your homework and have some places in mind in case you're not turning up anything good while on the road. One other idea would be to download a few city-specific apps (if you have a smartphone) for places you'll be visiting. This way you'll have this info in your pocket for when you roll into town at 5 p.m. and need to know the nearest hotel or guesthouse. Just be sure to check the fine print about roaming charges and offline data availability for maps and info in the app. Sutro Media, mTrip, and Lonely Planet all offer good downloadable apps for most major European cities, including Paris, Brussels, Brudges, etc. Lastly, if you're felling adventurous, take a look at sites like AirBnB.com or CouchSurfing.org. The New York Times has a good overview how these sites work here: http://nyti.ms/2XRyLF
