Just how overrun are the Adirondacks in august and september? For example, how does weekday visitor density compare to the eastern west virginia highlands? Will a person seeking a high degree of solitude be disappointed?

Since the Adirondacks are a pretty popular spot in the summer and early fall, I'd say you will not be too isolated. You might be better off traveling to the West Virginia Highlands for a quiet vacation. Hope that helps!
