There are a ton of options, depending on your budget:

Theater:
White Christmas at the Fifth Avenue Theater
The Rockettes at the Paramount Theater
Pacific Northwest Ballet- The Nutcracker

The Pacific Science Center (amusement park, food court, ice skating rink)
Experience Music Project
Seattle Aquarium
Woodland Park Zoo (with Christmas lights!)
Museum of Flight

Make an appointment at Nordstrom and have your makeup done (usually free, although some purchase is appreciated.)

Grab a book, magazine, or journal and spend the day at Cafe Lladro, or any independent coffee shop.

Downtown has movie theaters and a Gameworks video arcade. If you drive a little bit North to Edmonds there is a whirlyball facility, a fun combination of bumper cars and basketball.

If they're Twilight fans, nearby Forks, WA (a few hours drive) has tours of some of the sites used in the movie, which most young girls I know go nuts for.

Loads to do, not all of which involves shopping! For starters, stroll the market stalls at Pike Place and just enjoy the atmosphere. Bill Speidel's Underground Tour is a fun, slightly irreverent look at the old city that is literally buried beneath the streets of modern-day Seattle. Head up the Space Needle for great views (though this is an expensive option). If the kids are into their music, try the Experience Music Project, an interactive music museum detailing the roots, legends, and trends in American popular music.
