You don't say what you and your eight-year-old enjoy by way of activities, but I'd say skiing could be a good family option. New Hampshire has some excellent resorts like Bretton Woods and Waterville Valley with top-notch kids' ski schools. Quite apart from giving your daughter the chance to learn to ski and whoop it up on the slopes, this gives you and your wife some time to enjoy the snow (and each other's company!). And even if you're not skiers, Bretton Woods is packed with numerous other mountain-resort activities like golf, a spa, dogsledding, mountain biking, and more. There's also a humongous Canopy Tour that incorporates nine ziplines, nature trails, rope rappels, and two swinging suspension bridges. My guess is that'd be fun for any age! The guided tours are available year-round and take about three hours.

Clark's Trading Post has training bears (http://www.clarkstradingpost.com/) and is fun for an afternoon. I guess it depends on where you are in NH. Hanover (home to Darmouth College) is a really family friendly college town. Mount Monadock is a nice easy summit hike. What do you guys like doing?
